Menu Plan Monday

This last week was a disaster as far as meals went. I was really, really sick with a cold at the beginning of the week (thanks to my mom, who brought us over food, and to Little Ceasar's $5 pizzas, we managed to make it through the first half) and the second half of the week I was recovering from the cold and dealing with the dizziness that led to me blacking out in the post office. I think I might have cooked 1 or 2 real meals last week. There was a whole lot of scrounging, and my poor husband had to do a lot more than his fair share of the cooking. I woke up this morning feeling like my cold was mostly gone, so perhaps things will be better this week. So in an attempt to think positive thoughts about this week, I'm going to make an actual menu plan for Menu Plan Monday this week. I haven't made a menu in, oh, about 3 or 4 months, and I've never joined MPM before.

Monday: Beef and barley soup à la Tammy and colcannon, probably using the last of our garden cabbage. Salad with each meal, until we run out of greens.
Tuesday: Leftovers, maybe some bread depending on how much colcannon we have left.
Wednesday: Chicken and rice casserole.
Thursday: Leftovers.
Friday: Leftovers (chicken and rice casserole serves us for a long time....).
Saturday: Baked ziti. I checked the blog archives, and it turns out I've never blogged this recipe before. That's a shame; I really love my baked ziti recipe. Check back around Saturday for the recipe. :-)
Sunday: Leftovers.

Shopping list:
frozen peas
fresh mushrooms
chicken breasts (check freezer first to be sure we're out; but buy some anyway at Ingles $1.78/lb!!)
spaghetti sauce
mozzarella cheese
1 zucchini
eggs
milk

Estimated cost of this week's groceries: $25, which leaves an extra $25 either for the checking account or for buying grocery staples. Or for buying junk food (ack!).

    Allow me to announce that that colcannon recipe is now one of my favorite recipes ever. It's basically like mashed potatoes that have sauteed onions and bacon! What's not to like?!?! I hardly even notice the cabbage in there, but I never really disliked cabbage much in the first place.
